Thai Curry Quinoa

Ingredients
- Quinoa, 1.5 cups
- Coconut milk, 1 cup
- Red curry paste, 2 tbs.
- Kale, 8 oz.
- Lime, 1
- Green onion, 3
- Roasted peanuts, 1/4 cup
- Olive oil, 1/2 tsp.
Equipment
- Food processor
- Large pot
- Small bowl
Prep
- Rinse quinoa
- Zest and slice lime into wedges for serving
- Slice green onions, separate the dark green onions
- Crush peanuts in the food processor
Instructions

Combine in large pot: quinoa, coconut milk, red curry paste, and water (according to package instructions).

Bring to boil over medium-high heat.

Once boiling, lower heat and simmer ~10 minutes.

Place kale on top of the quinoa, simmer ~5 minutes.

Turn off heat, let rest ~5 minutes.

Combine in small bowl: lime zest, green onion (light green and white onion only), crushed peanuts (save some for garnish), and olive oil.

Stir in peanut mixture into the pot, let rest ~3-5 minutes.

Plate quinoa.

Spinkle remaining peanuts and dark green onions on top, and serve lime wedges on the side.
