Thai Curry Quinoa

Instructions

  1. Combine in large pot: quinoa, coconut milk, red curry paste, and water (according to package instructions).

  2. Bring to boil over medium-high heat.

  3. Once boiling, lower heat and simmer ~10 minutes.

  4. Place kale on top of the quinoa, simmer ~5 minutes.

  5. Turn off heat, let rest ~5 minutes.

  6. Combine in small bowl: lime zest, green onion (light green and white onion only), crushed peanuts (save some for garnish), and olive oil.

  7. Stir in peanut mixture into the pot, let rest ~3-5 minutes.

  8. Plate quinoa.

  9. Spinkle remaining peanuts and dark green onions on top, and serve lime wedges on the side.
