Ingredients
- Black beans (undrained), 2 15 oz. cans
- Olive oil, 1.5 tbs. plus extra
- Red or yellow onion, 1 diced
- Garlic cloves, 4 chopped
- Jalapeño or serrano pepper, 1 diced
- Cumin, 1/2 tsp.
- Oregano, 1.5 tsp.
- Red pepper flakes, 1/2 tsp.
- Salt, to taste
- Black pepper, to taste
- Diced tomatoes, 1 14 oz. can
- Lime, 1/4
Equipment
- Can opener
- Medium pot
Prep
- Dice onion
- Chop garlic
- Dice hot pepper
Instructions

Heat pot over medium heat with ~1.5 tbs. olive oil.

Add onion, cook until softened and golden but not brown, ~5-6 minutes.

Add garlic, hot pepper, cumin, oregano, and pepper flakes, cook ~1-2 minutes.

Add tomatoes.

Adjust heat to maintain a simmer, cook until tomatoes break down and most of the liquid has evaporated, ~8-10 minutes.

Add salt and pepper, lightly to taste.

Add the black beans with the liquid.

Bring to a simmer, cook for ~15 minutes until thickened. If it gets too thick, add water.

Finish off with some olive oil and lime juice.

Season with salt, pepper, and lime juice, to taste.
