Instructions

  1. Heat pot over medium heat with ~1.5 tbs. olive oil.

  2. Add onion, cook until softened and golden but not brown, ~5-6 minutes.

  3. Add garlic, hot pepper, cumin, oregano, and pepper flakes, cook ~1-2 minutes.

  4. Add tomatoes.

  5. Adjust heat to maintain a simmer, cook until tomatoes break down and most of the liquid has evaporated, ~8-10 minutes.

  6. Add salt and pepper, lightly to taste.

  7. Add the black beans with the liquid.

  8. Bring to a simmer, cook for ~15 minutes until thickened. If it gets too thick, add water.

  9. Finish off with some olive oil and lime juice.

  10. Season with salt, pepper, and lime juice, to taste.
