Southern-Style Mac and Cheese

Ingredients
- Elbow macaroni pasta, 1 lbs.
- Colby Jack cheese, 8 oz. shredded
- Monterey Jack cheese, 8 oz. shredded
- Cheese, 8 oz. shredded (Cabot New York Extra Sharp Cheddar)
- Butter, 8 tbs.
- Milk, 1.5 cups
- Half and half, 1 cup
- Sour cream, 1 cup
- Eggs, 2
- Panko bread crumbs, 3/4 cup
- Garlic powder, 1/4 tsp.
- Smoked paprika, 1/4 tsp.
Equipment
- Grater
- Large pot
- Colander
- 9x13 glass pan
Prep
- Grate cheese
- Grease pan with 1 tbs. butter
Instructions

Preheat oven to 375F.

Bring large pot of water to boil. Cook pasta until 1 minute short of al dente.

Melt 3 tbs. butter in a small bowl.

Mix into the butter: panko bread crumnbs, garlic powder, and paprika; set aside.

Beat eggs in small bowl, set aside.

While pasta is draining, melt 4 tbs. butter in large pot.

Mix pasta in until coated with butter.

Mix in: milk, half and half, sour cream, and eggs.

Mix in the Colby Jack and Monterey Jack cheeses.

Spread in pan.

Sprinkle with cheddar cheese.

Sprinkle with bread crumb topping.

Bake 35-40 minutes.

Serve immediately.
