Shredded Chicken

Ingredients
- Chicken breasts or thighs, 3-4 or 6 pieces
- Garlic, 3 cloves minced
- Frozen chopped onions, 1/2 cup
- Bay leaf, 1
- Salt, to taste
- Black pepper, to taste
Equipment
- Large pot
- Standing mixer
Prep
- If the chicken breasts are thick, butterfly
- Mince garlic
Instructions

Place chicken in large pot.

Add garlic, onions, bay leaf, salt, and pepper to the pot.

Add water to the pot until the chicken is just covered.

Bring to a boil, simmer ~15-30 minutes until the chicken is just cooked through.

Take the chicken out and place into the bowl of the standing mixer.

Reduce remaining liquid.

While the liquid is boiling down, shred the chicken in the mixer.

When the liquid is reduced, turn off the heat and allow some time to cool.

Pour the remaining liquid into the shredded chicken, mix until evenly coated.
