Roasted Parmesan Herb Acorn Squash

Ingredients
- Acorn squash, 1
- Olive oil, 2 tbs.
- Parmesan, 1/2 cup grated
- Garlic powder, 1/2 tsp.
- Basil, 1/4 tsp.
- Thyme, 1/4 tsp.
- Oregano, 1/4 tsp.
- Salt, to taste
Equipment
- Grater
- Large bowl
Prep
- Half and clean squash; slice into 1-inch scalloped wedges
- Grate parmesan
Instructions

Preheat oven to 400F.

Mix all ingredients in large mixing bowl until evenly coated.

Place squash on baking sheet in a single layer.

Spread any remaining mixture on top of the squash slices.

Bake 25-30 min. or until soft and golden.
