Polenta

Ingredients
- Water, 4 cups
- Salt, 1/2 tsp.
- Cornmeal, 1 cup
- Butter, 1 tbs. plus enough to grease pan
- Parmesan, 1/8 cup shredded

Cheese, 1/8 cup shredded (Cabot New York Extra Sharp Cheddar)
- Olive oil, for frying
Equipment
- Loaf pan
- Plastic wrap
- Medium pot
- Frying pan
Prep
- Grate cheese
- Grease loaf pan
Instructions

Bring water to boil in pot.

Stir in salt and cornmeal.

Reduce heat to low.

Cook for ~20 min. stirring often until the consistency is thick and smooth.

Stir in butter and cheese.

Pour polenta in greased loaf pan.

Cover with plastic wrap and refrigerate at least two hours.

When ready to fry, slice polenta into sticks.

Heat frying pan over medium heat.

Add oil to cover the bottom.

Fry sticks until each side is golden brown, ~10 min. per side.

Place finished sticks on a paper towel to drain excess oil.
