Ingredients
- Daikon radish, 1 medium
- Salt, 1 tsp.
- Gochugaru, 1 tbs.
- Sugar, 1 tsp.
- Toasted sesame seeds, 1 tsp.
- Fish sauce, 1 tbs.
- Rice vinegar, 1 tbs.
- Sesame oil, 1 tsp.
- Garlic, 1 clove grated
- Ginger, 1/2 tsp. grated (optional)
- Green onion, 1 stalk sliced (optional)
Equipment
- Colander
- Medium bowl
- Grater
Prep
- Wash, peel, and chop daikon radish into matchsticks or cubes.
- Slice green onion
- Grate garlic
- Grate ginger
Instructions

Mix together the radish and salt in colander, let sit in the sink for 20 minutes.

While the radish is resting, mix together in the bowl: gochugaru, sugar, sesame seeds, fish sauce, rice vinegar, sesame oil, ginger, garlic, and green onion.

Drain the liquid without squeezing the radish. Do not rinse.

Add the radish to the bowl and mix until even.

Chill until ready to serve.

Leftovers can be stored in the fridge for up to 5-7 days.
