Ingredients
- Tempeh, 8 oz. sliced
- Peanuts, 2 oz.
- Red chillies, 2 sliced
- Shallot, 1 sliced
- Garlic, 3 cloves sliced
- Galangal, 1/4 tsp.
- Bay leaf, 1
- Brown sugar, 2 tbs.
- Lime, 1/4
- Salt, to taste
- Canola oil, 1/4 cup
Equipment
- Lemon squeezer
- Frying pan
Prep
- Quarter lime
- Slice tempeh into 2-inch matchsticks
- Slice red chillies diagonally
- Thinly slice shallot
- Slice garlic
Instructions

Fry tempeh until golden and crispy; set aside.

Fry peanuts until golden; set aside.

Fry chillies, ~1 minute; set aside.

Fry shallot until golden and crispy; set aside.

Fry garlic until golden; set aside.

Remove oil if necessary, leaving ~3 tbs. remaining in pan.

On medium heat, fry: 3 tbs. water, galangal, bay leaf, brown sugar, and lime juice.

When the mixture thickens and caramelizes, add chillies, shallots, and garlic.

Add tempeh and peanuts.

Stir until the tempeh is well-coated and glazed.

Salt, to taste.
