Instructions

  1. Fry tempeh until golden and crispy; set aside.

  2. Fry peanuts until golden; set aside.

  3. Fry chillies, ~1 minute; set aside.

  4. Fry shallot until golden and crispy; set aside.

  5. Fry garlic until golden; set aside.

  6. Remove oil if necessary, leaving ~3 tbs. remaining in pan.

  7. On medium heat, fry: 3 tbs. water, galangal, bay leaf, brown sugar, and lime juice.

  8. When the mixture thickens and caramelizes, add chillies, shallots, and garlic.

  9. Add tempeh and peanuts.

  10. Stir until the tempeh is well-coated and glazed.

  11. Salt, to taste.
