Indonesian Fried Tofu (Tahu Goreng Bumbu Kuning)

Ingredients
- Extra firm tofu, 14 oz.
- Shallot, 1 small
- Garlic, 2 cloves
- Cashews, 6
- Bay leaf, 1
- Coriander, 1/2 tsp.
- Turmeric, 1/2 tsp.
- Galangal, 1/4 tsp.
- Salt, 1/2 tsp.
- Corn starch, 1/2 cup
- Canola oil, for frying
Equipment
- Food processor
- Medium pot
- Large frying pan
- Small bowl
Prep
- Peel and cut ends of shallot and garlic
- Place corn starch in a small bowl
Instructions

Blend shallot, garlic, and cashews in the food processor until finely chopped.

Cut tofu into 8 blocks.

Boil the mixture, bay leaf, coriander, turmeric, galangal, salt, and 1 1/2 cups of water in medium pot.

Add tofu to the pot and lower heat to a simmer.

Simmer until liquid is mostly dry.

Heat a generous amount of oil in the frying pan.

When pan is hot, coat tofu cubes in corn starch and fry on each side until golden brown.
