Instructions

  1. Blend shallot, garlic, and cashews in the food processor until finely chopped.

  2. Cut tofu into 8 blocks.

  3. Boil the mixture, bay leaf, coriander, turmeric, galangal, salt, and 1 1/2 cups of water in medium pot.

  4. Add tofu to the pot and lower heat to a simmer.

  5. Simmer until liquid is mostly dry.

  6. Heat a generous amount of oil in the frying pan.

  7. When pan is hot, coat tofu cubes in corn starch and fry on each side until golden brown.
