Green Curry Lentil Soup

Ingredients
- Olive oil, 2 tbs.
- Onion, 1 chopped
- Garlic, 2 cloves minced
- Ginger, 1 inch peeled and minced
- Thai green curry paste, 1/4 cup
- Sweet potato, 1 peeled and cubed
- Brown or green lentils, 3/4 cup
- Chicken broth, 32 oz.
- Coconut milk, 13.5 oz.
- Baby spinach, 4 cups
- Fish sauce, 1/2 tsp.
- Lime wedges, 4
Equipment
- Large pot
Prep
- Chop onion
- Mince garlic
- Mince ginger
- Peel and cut sweet potato into 1/2 inch cubes
- Slice lime wedges
Instructions

Heat oil in pot over medium heat.

Add onion, garlic, and ginger; stir until onion is translucent, ~3 minutes.

Add curry paste and stir until fragrant, ~3 minutes.

Add sweet potato, lentils, and broth; bring to a boil.

Reduce heat to a simmer.

Stir occasionally until sweet potatoes are cooked through and lentils are tender, 20-25 minutes.

Add coconut milk and return to a simmer.

Add spinach and fish sauce. Cook until spinach is just wilted, ~30 seconds.

Season with salt and/or fish sauce as needed.

Serve with lime wedges.
