Cheesy Quinoa, Chicken, and Kale

Ingredients
- Quinoa, 1 cup
- Olive oil, 1 tbs.
- Chicken breasts, 2
- Butter, 1 tbs.
- Garlic, 2 cloves
- Onion, 1 medium
- Half and half, 1/2 cup
- Chicken stock, 1 cup

Cheese, 2 cups shredded (Cabot New York Extra Sharp Cheddar)
- Kale, 8 oz.
- Salt, to taste
- Black pepper, to taste
Equipment
- Medium pot
- Large frying pan
- Grater
Prep
- Grate cheese
- Chop onion
- Chop garlic
- Cut chicken into 1 in. pieces
Instructions

In medium pot, cook quinoa according to package instructions.

In large pan, heat oil over medium-high heat.

Sautee chicken with salt and pepper until cooked.

Transfer chicken to a large plate.

Over medium heat, add butter, onion, and garlic until soft.

Add half and half, chicken stock, and kale.

Bring to a boil and simmer until somewhat reduced, ~2-3 minutes.

Stir in half of the cheese.

Gently mix in chicken and quinoa.

Top with remaining cheese.

Simmer until cheese is bubbling, ~3-4 minutes.
